Long Time No See!

Hello Everyone!

Sorry for being so MIA lately.. I just have been either too busy or too exhausted to end up making a post each day. Good news, I have been making a bunch of different recipes and playing around with some ideas I have come up with on my own. For this post.. I will mainly let the pictures do the talking..

Kale ChipsFound these kale chips that I love at a local grocery store for only $6.99 when I was previously paying $9.99!

PB&JI love these new Arnold Pocket Thins! They are almost like a pita but made with 8 grain bread. They are delicious. I enjoyed them this week as a PB&J Sandwich.. I really enjoyed it! It had been a while since I had a classic PB&J and it was just as amazing as I remembered.

SnackI enjoyed this sweet treat which had around 50 cals! It was a Magic Pop cracker which has only 15 cals with some light whipped topping and a sliced strawberry. I savored every bite of it with a cup of peach green tea on the side.

Next, I ended up making some stuffed peppers!

Inside the red bell peppers were:

  • Lean Ground Turkey
  • Quinoa
  • Garlic
  • Carrots
  • Onions
  • Zucchini
  • Red Pepper Flakes

I stuffed the peppers with the ingredients (didn’t measure, just guessed) and baked them for 40 minutes at 350°. For the last 10 mins, I added mozzarella cheese and parmesan cheese.

The following morning I woke up craving fruit so I ended up combining all the different fruits I came across in the fridge to make a fruit salad.

BreakfastIt was delicious and just what I was craving. I ended up having left overs for a next few days to snack on as well!

Well Hello There!

Sorry I didn’t get around to posting yesterday, I had a pretty busy day. I ran a lot of errands, met a friend for lunch, got my mom some bday gifts then headed off to work.

For lunch my friend and I went to the Cheesecake Factory, I ended up getting the Luau Salad but didn’t snap a picture.

Somewhere in between there, I stopped by the local dog park to let my doggies get some exercise and burn some energy. There were no other dogs there, not shocking considering it’s winter haha, but they still had a great time.

I grabbed some new James Patterson books from the library yesterday so I am excited to get to reading.. I started a book called “The Postcard Killers” last night while I was working. Only about 100 pages in so I haven’t really gotten to any good parts yet. Usually I am more hooked into the book by this point tho, not sure why the connection isn’t quite there.

This morning I woke up and had an egg sandwich with a couple strawberries on the side

BreakfastIt was delicious but after I had it, I almost wished that I had greek yogurt instead.. not sure why? Guess I was in the end craving something sweet.

Happy Monday!

After such an amazing night sleep last night I awoke and started my day with the regular:

BreakfastNothing you haven’t seen before but just as delicious as ever! I did some things around the house, cleaned up after such a busy weekend and made an egg sandwich for lunch with some roasted veggies on the side which I made last week.



This dish has been popping up a lot lately.. It is so delicious and gives me a salty fix that I need sometimes. For an afternoon snack, I just enjoyed a fresh orange.

Frozen Deliciousness

Hope everyone had an amazing weekend! Mine flew by! On Friday, I worked 2-7, then babysat 8-12. Woke up for work Saturday 10-6 then went out Saturday night and had to be up for work at 10am on Sunday! Crazy busy so I didn’t have time to blog much and found myself forgetting to snap pictures of almost everything I ate! Boo!

Friday I made a version of a low calorie ice cream sandwich. I got the recipe a while back from my sister. It is a three ingredient recipe and is super easy, guilt-free & delicious! All you need is:

  • Graham Crackers
  • Light Whipped Topping
  • Chocolate Chip (optional)

"Ice Cream Sandwich" Filling

All you do is break the graham crackers in half and make a sandwich using the whipped topping then freeze! Once they’re frozen, they taste like an ice cream sandwich.. soo good!

Eggs n’ Bacon

Hey everyone!

This morning I once again woke up and instead of craving sweets as I usually do, I was craving salty! I ended up making the same breakfast as yesterday because I really enjoyed it.


BreakfastOnce again, it was delish! It looks like there is a TON of cheese on the sandwich but there was only one slice! I toasted the cheese on the bread that I think thats why it looks like that, might have like soaked in? I think it is the cheese that makes this sandwich really good, because usually I don’t put cheese on my egg sandwiches at home. The orange that I had on the side was soo sweet and juicy! I enjoyed every bite. I also had my green drink with vitamins and minerals and now I am off to work for the next 5 hours. Then I have to babysit once I get out from work! Gonna be a long day, but I’ll be making the money!

Day in the Kitchen

This morning I woke up CRAVING protein. I knew I had to had it. Instantly, I thought egg sandwich. Being that I had a lot of errands to run locally around town, I figured I’d do all my errands and once they’re complete I’ll grab an egg sandwich and head home. I stopped by the library, water store, and grocery store to grab some ingredients for recipes I’ve wanted to make. While at the grocery store I saw a fresh loaf of low calorie weight watchers bread so I instantly decided that I would make my own egg sandwich and save the money and some cals.

Egg SammieWhipped up some turkey bacon, 4 egg whites, american cheese and the fresh Weight Watchers multigrain bread. It was delicious, just what I was craving. It felt even better that it was guilt-free! I also had a fresh navel orange on the side.

Then I got to cooking!

I knew I’d be more likely to eat some veggies if I had them made, so I took the liberty to roast a bunch of veggies to hold me over for the rest of the week/weekend.


I preheated the oven to 350° and started chopping! (I ended up not using the snow peas because my pan was getting awfully full and I didn’t wanna over-crowd them)

Topped them with a little misto olive oil spray, granulated garlic, pepper and a smidgen of salt and in the oven they went for 45 mins. I flipped, spun, rotated, whatever you wanna call it every 15 mins or so.SeasoningsIn the end, they were roasted perfectly and tasted delicious!

While the veggies were roasting away in the oven, I started on some baked egg rolls that I have been DYING to make since I came across the recipe on pinterest a while ago. However, I didn’t have a lot of the ingredients it called for so I managed to make my own version!

Wonton 1

I used 5 simple ingredients:

  • Egg Roll Wraps
  • Cole Slaw Mix
  • Sesame Oil
  • Soy Sauce
  • Carrots

    I used Nasoya Egg Roll Wraps

They came out delicious for being a test run but there was definitely something missing so next time I make them, I will try harder to follow the recipe.

I took 1/3 bag of slaw and sauteed it in a little bit os sesame oil with the shaved carrots and some low sodium soy sauce. Just so you know, anything you cook in sesame oil will automatically take on an asian flavor because it is what chefs use in chinese/japanese restaurants. After the mixture was cooked and somewhat cooled, I started wrapping.

 The recipe calls for 2 tablespoons of the mixture to be put in the egg roll wrap, but after trying this recipe for the first time, I would say to put more. For the assembly part of the recipe, I will let the pictures do the talking:

Basically, you fold it like you would a burrito. Then put them on a greased pan, spray the top of them with a little cooking spray and pop them in the 400° oven for 8-10 mins then flip for another 5-7 (which I completely forgot to do because I was busy cleaning a sink full of dishes!)
