Sorry for being so MIA lately.. I just have been either too busy or too exhausted to end up making a post each day. Good news, I have been making a bunch of different recipes and playing around with some ideas I have come up with on my own. For this post.. I will mainly let the pictures do the talking..
Found these kale chips that I love at a local grocery store for only $6.99 when I was previously paying $9.99!
I love these new Arnold Pocket Thins! They are almost like a pita but made with 8 grain bread. They are delicious. I enjoyed them this week as a PB&J Sandwich.. I really enjoyed it! It had been a while since I had a classic PB&J and it was just as amazing as I remembered.
I enjoyed this sweet treat which had around 50 cals! It was a Magic Pop cracker which has only 15 cals with some light whipped topping and a sliced strawberry. I savored every bite of it with a cup of peach green tea on the side.
Next, I ended up making some stuffed peppers!
Inside the red bell peppers were:
- Lean Ground Turkey
- Quinoa
- Garlic
- Carrots
- Onions
- Zucchini
- Red Pepper Flakes
I stuffed the peppers with the ingredients (didn’t measure, just guessed) and baked them for 40 minutes at 350°. For the last 10 mins, I added mozzarella cheese and parmesan cheese.
They were delicious! My dad and I really enjoyed them!
The following morning I woke up craving fruit so I ended up combining all the different fruits I came across in the fridge to make a fruit salad.
For my bowl, I added some light whipped topping, graham cracker dust (crumbs), and graham cracker squares (or rectangles if we want to get technical)
It was delicious and just what I was craving. I ended up having left overs for a next few days to snack on as well!
